The Science Behind Extraction and Brewing Techniques Coffee

StepUp Coffee is passionate about bringing the finest coffee to its customers. We understand that extraction and brewing techniques can determine the quality of the finished cup. That’s why it is important for us to educate our customers on the science behind these processes.

The extraction process begins with grinding coffee beans to a desired coarseness. The finer the grind, the more surface area is exposed, allowing for more extraction of flavor compounds from the beans during brewing. The grind size must be matched with each type of brew method; for example, espresso requires a much finer grind than French press does.

Next, water temperature plays an important role in extraction as well. Too hot or too cold can lead to over-extraction or under-extraction respectively, resulting in a sour or bitter tasting cup of coffee. Generally, 195-205 degrees Fahrenheit is recommended for optimal flavor extraction.

Brew time also affects flavor profiles and body in a cup of coffee. If brewed too quickly, solubles won’t have enough time to extract properly; however if brewed too long, over-extraction will occur which may give off an unpleasant taste. Each brew method has its own brew time requirements (e.g., Aeropress requires 2 minutes while pour over typically takes 4 minutes).
